On Sunday evening I decided to make vichyssoise. Vichyssoise is a cold soup made from potatoes, leeks onions and cream. Its very easy to make and its delicious.Here is my recipe:
Vichyssoise
Ingredients (serves 6)
1 Onion (sliced)
6 Potatoes (peeled and chopped into chunks) (you can also use sweet potatoes for something a bit different)
6 Leeks (chopped into chunks)
1/2 teaspoon mild yellow curry powder
1/2 cup chopped parsley
1/2 cup choped chives
500ml chicken stock
100ml single cream
plain yoghurt
cayenne pepper
Instructions
Lightly sauté onion in oil in large saucepan.
Add curry powder and cook until fragrant.
Add the stock potatoes and leeks and boil until soft.
Blend mixture with stick blender till smooth.
Add chives and parsley and stir.
Allow to cool.
Mix in cream and refrigerate untill you are ready to serve.
Serve cold with a dollop of plain yoghurt and some cayenne pepper.

ReplyDeleteIt's even simplier and cheaper than that:
you don't really need yogurt use cream instead. Forget about the curry,just use black pepper and salt.
do not use chicken stock just water and cream(it's a veggy soup).
you better use butter instead oil, 'cause this is a frenchy creamy soup and the french cuisine use butter not olive oil like spanish, greek or italian.
you don't need the parsley, chive or cayenne, just a bit of black pepper or five peppers. if you wanna use the chive, just add some chopped when serving on top
you must blend it more, it's have to be homegenic.
Anyway, I'm sure it was delicious, but, try the simply way. sometimes the simplier the better.
you pronounce it: vi(like victor)-chi(like chicken)-su(like super)-as(like aswell)
Thanks for the suggestions Alvaro, but as you know, cooking is a subjective art. I am sure there are hundreds of recipes for vichyssoise. None of them is "wrong". This is my version. Please don't stop making suggestions and giving your own take on recipes though. Its always nice to have a variety to choose from.

According to Wikipedia and Answers.com it is pronounced vihsh-ee-SWAHZ, or VEE-she-swahz. But according to "Kate in the Kitchen" (http://kateinthekitchen.com/2008/11/18/a-cold-day-to-honor-chilled-soup/) it is pronounced Vee shee swaz or Veesh eee swaz. Sounds like both are right. Just as long as YOU know what you're talking about, everyone will be very impressed.
of course,man! never said it was wrong, I just suggest to keep it simple. Also it's cheaper and quicker.
